Deckle brisket (also known as the point) is the fattiest cut of the brisket and, arguably, the most delicious. The deckle cut of brisket shrinks between 40% and 50% during the cooking process, regardless of how it is prepared or the speed at which it is prepared. Deckles range from 3lbs to 5lbs. We cannot control the weight of each roast. For a standard 3 course dinner, the protein (or entree) should be 6 oz. – 8 oz. per person depending on appetite. Example: a 5lb. deckle will lose approximately 2.25lbs (45%) during the cooking process leaving a 2.75lbs brisket (44 ounces.) At 7 ounces of brisket per person, a 2.75lb. roast (44 ounces) will feed approximately 5-7 people.
